I love home made quiche an this is one of my own recipe's.
Ingredients:
Short crust pastry
- 220gm self raisin flour
- 100gm Butter
- half teaspoon salt
- 4 tablespoons water
Filling
- 1 Leek
- 1 red onion
- 3 large eggs
- 50 gm red Leicester
- 50 gm mozzarella
- 3 tablespoons double cream
- 2 tablespoons tomato sauce
- 7 pieces of chorizo
Method
- make pastry & blind bake 20 mins
- fry onions & leeks until coloured
- mix cheese, eggs, onion & leeks together with the cream
- cover base of pastry with tomato sauce and place chorizo over bottom
- pour over mixture
- bake in oven @ 160c for about 20/25 mins
